with flavours of gooseberries, blackcurrent leaf, capsicium, tropical fruit
and passionfruit. The palate is dry, vibrant and tightly structured with
racy acidity. Food Match: to compliment shellfish, lobster, crayfish and grilled fish. Use citrus-based sauces incorporating fresh herbs such as basil, coriander and dill. One of my personal favourites is risotto portobello.

On the palate all these characters combin elegantly with limes and stone fruit creating a wine of excellent depth with a refreshing lime finish. Food Match: Ideal to compliment shellfish, lobster, crayfish and grilled fish. Use lemon and lime-based sauces incorporating fresh herbs such as basil, coriander and dill. An ideal aperitif when served with tapas and chèvre.

Delicious pear and tropical fruit characters combine elegantly with a mouth-watering honey-melon freshness. On the palate all these characters combine with nectarines and peaches creating a rich and mouth filling wine with a refreshing citrus finish.
Food Match: Ideal to compliment Asian food, veal, chicken and pasta using citrus based sauces to compliment the flavours of the wine. My personal favourites are salmon teriyaki or Penang.

Gardo Morris Te Mana Merlot

Hand harvested grapes were gently destemed and crushed into small 4 ton open top fermenters,after one week cold maceration natural yeast fermentation took place with regular pumping over and hand plunging.After 4-5 weeks on skins the wine was gently run off by gravity and the skins were gently pressed using a small basket press. The wine then underwent maturation in 225 L French barriques (40 % new) in the traditional Bordeaux style with regular racking. Full malolactic fermentation in barrique has softened the acid and added complexity. The wine was aged in oak for twelve months, then after a light egg white fining it was bottled unfiltered.
Food match: Ripe plums, dark cherries, spices,bitter chocolate and liquorice combine creating a wine of many layers. On the palate these rich mouth filling characters combine with truffles, almonds and sweet vanilla creating a wine of exceptional intensity.
Gardo Morris Te Mana Chardonnay -

Hand harvested grapes were gentlywhole bunch pressed with aeration and no sulphur dioxide protection. After 12 hours settling the juice was fermented in the traditional Burgundy style, with high solids and wild yeasts in French oak barrels (50 % new) which were stirred twice weekly for twelve months. Full malolacticfermentation has softened the acid and added complexity. The wine was aged in oak for twelve months, then on fine lees in tank for two month before being bottled unfiltered. A classic Hawkes Bay Chardonnay, warm and full-bodied, with flavours of Grapefruit, white peach, butterscotch, grilled hazelnuts and elegant creamy vanillan oak. This is a complex Chardonnay with character, primary fruit flavours balanced with mineral and yeast autolysis derived mouthfeel and texture, a perfect expression of New Zealand chardonnay at its best.

On the palate these rich mouth filling characters combine with a gentle earthy robustness with a fine tannin core, which leads to a rich velvety finish. After one week cold maceration natural yeast fermentation took place with regular pumping over and hand plunging. After 4 weeks on skins the wine was gently run off by gravity and the skins were gently pressed using a small basket press. The wine then underwent maturation in 225 L French barriques (40 % new) with regular racking. Full malolactic fermentation in barrique has added greater complexity. The wine was aged in French oak barriques for fifteen months, then after a light egg white fining it was bottled in early August 2006.
The nose shows a rich perfume of violets, almonds, dark berry fruit and vanilla. On the palate ripe blueberries, black currents and fresh dark plums combine elegantly with freshly-cracked pepper. The finish is of delicate berry fruit, almonds and sweet vanilla creating a wine of exceptional intensity and a rich velvety finish.
